A clean, real Chicken Pot Pie … or should I say real clean …
Holy cow or I mean holy chicken – this one is GOOD! Now, please do not be intimidated because it’s long – there is just a lot of good stuff to talk about …
If you are like me you may think that cooking with a can of cream of mushroom soup is healthy eating – well that can of soup is packed with all sorts of stuff that I was never even aware of … You can cook from scratch and not be intimidated.
Here is Mike’s simple, clean Chicken Pot Pie recipe …
Filling
What you need …
- 3 pound organic, pastured chicken (preferably from a local farmer – the organic chicken in stores is not nearly as good as what you will get from a local farmer – plus the term ‘free range’ can be quite misleading … there really are a lot of farmers starting to raise pastured, non GMO, Organic fed chickens – ask around and support your local community while eating way healthier)
- 1/2 cup organic, pastured chicken broth (from the organic, pastured whole chicken you just cooked. – common ‘heal your gut’ food)
- 3 tablespoons organic, pastured butter
- 3 tablespoons unbleached, organic all purpose flour
- 1/2 teaspoon sea salt (preferably Sea Love Sea Salt)
- 1/2 teaspoon dried organic thyme
- 1/4 teaspoon organic pepper
- 1/4 cup chopped organic onion
- 2 cups of organic mixed vegetables, fresh if possible (we do carrots, corn, green beans)
- 1 cup organic milk (we love raw goats milk from our organic fed dairy goat when we have it đŸ™‚
- 8 quart pot to boil chicken
- 3 quart pot to make filling
- 2 quart baking dish (our 8 by 8 dish is full to the top – so you could go bigger, if you use a bigger pan, go less time in oven)
Biscuit Topping (the biscuits are from a Whole Foods recipe we love)
What you need ..
- 2 cups organic unbleached all purpose flour
- 1 tablespoon aluminum free, non GMO baking powder (unless it says aluminum free it has aluminum in it, get aluminum free)
- 1 teaspoon raw cane organic sugar
- 1/2 teaspoon sea salt (preferably Sea Love Sea Salt)
- 1/2 cup solid refined organic coconut oil (under 75 degrees it will be solid)
- 3/4 cup organic milk
- mixing bowl
- pastry blender (or fork)
Filling
What you do …
- pre-heat over to 350 degrees F
- put chicken in pot, cover it with water
- boil chicken on stove top ’till it falls apart, (this is approx. 45 minutes or so)
- after chicken is done, set it aside, let it cool, then handpick meat off of the bones (you will only need 1/2 cup of broth – you should def. not waste the rest – you can take the rest of the broth and put the bones back in it, put it in slow cooker, add a couple tablespoons of braggs raw apple cider vinegar and cook on low for 24 hrs – this makes a very healing bone broth – but ONLY do this with organic, pastured chicken bones – you do not want to ingest anything leaching out of the bones from a conventional chicken)
- melt butter in smaller pot
- to small pot, add flour, stir a lot as it cooks for a few minutes on med high
- to small pot, add milk + broth + onion, let it simmer for a few minutes (this is how you make a ‘cream of anything’ soup … this is your can of cream of chicken soup … but you could easily make it cream of broccoli by adding broccoli or cream of anything else … and so much better for you than cream of _______ out of a can! … oh, it is also great gravy)
- turn off heat, add chicken + the rest of the vegetables (this completes the filling)
- pour filling into baking dish
Biscuit Topping
What you do …
- combine dry ingredients in mixing bowl
- cut in coconut oil with fork or pastry blender
- add milk, mix it up by hand
- spread it on top of filling in pan (the super neat part here is you just made biscuits! – you could just use this recipe and drop the biscuit batter on a parchment paper covered cookie sheet, bake 18 min. at 425 degrees F and voila – you just made biscuits from scratch – this amount makes 8 good sized biscuits, really healthy, clean ones from real ingredients! – hey add that to your gravy recipe above and you have gravy biscuits!)
Bake in oven at 350 degrees F for about an hour, or until biscuits are cooked all the way through.
Congratulations you just made cream of ____ soup, Congratulations you just made biscuits, Congratulations you just made gravy, Congratulations you just made healing broth (commonly used to ‘seal your gut’) and Congratulations you just made a chicken pot pie, from a whole chicken, no doubt – and it is all super clean, real food! No preservatives, no added chemicals, no GMOs, or anything else that we do not want to use as fuel for our amazing bodies … holy cow .. YOU rock, you can DO THIS.
